ingredients

  • 1onion, chopped
  • 2cloves of garlic, chopped
  • 125 ml1/2 cupof black beer, such as The Criminal Maltese Way
  • 1slice of bread, crumbled
  • 125 ml1/2 cupof milk
  • 1egg
  • 680 g1 1/2 lbslean ground beef
  • 45 ml3 c. soupfresh parsley, chopped
  • 170 g6 ozPerron Cheddar Cheese
  • Salt and pepper from the mill
  • 60 ml1/4 cupmayonnaise
  • 60 ml1/4 cupsour cream
  • 30 ml2 tbsp. soupfresh chopped chives

Preparation

  1. In a saucepan, melt butter over medium heat and cook onion and garlic for 5 minutes. Remove half of the onions and garlic, transfer to a bowl and let cool. Pour the beer into the pan and let reduce almost completely. Remove from heat and let cool.
  2. In a large bowl, place the crumbled bread and pour the milk. Allow the bread to absorb the milk before defatting with a fork. Add the egg and beat well. Add ground beef, parsley, grated cheese, chilled onion and garlic mixture. Salt and pepper generously.
  3. Form pellets 1 inch (2.5 cm) in diameter and place in a baking dish. Bake in preheated oven at 220 ° C (425 ° F) for 15 to 20 minutes.
  4. Meanwhile, in a bowl, combine onions and garlic with beer, mayonnaise and sour cream. Season with salt and pepper and add the chives.
  5. Serve the dumplings with the beer sauce to soak.
